Observed cilantro in walk-in cooler to be uncovered. Observed burritos in reach-in freezer uncovered. Observed RTE foods (cooked chicken, "Gueras", avocados) to be uncovered in reach-in coolers.
COS: PIC covered all food-items listed above. CA: Stored food shall be covered as to prevent overhead contamination.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)
Observed both prep-top coolers in grill area to be holding temperatures above the 41F safe-zone.
RCA: PIC shall have equipment repaired or replaced. All equipment shall be maintained in a state of repair.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed dried food debris and food build-up on sides of equipment and on walls.
RCA: PIC shall have non-food contact surfaces cleaned. The food-contact surfaces of cooking equipment and pans shall be kept free of encrusted grease deposits and other soil accumulations. Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.
