Observed build-up around nozzles of frozen drink machine. Observed accumulation inside drain well of soda machine. Observed build-up around ice baffle of soda machine. Observed food debris on top of wall knife storage rack.

RCA: Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.

Observed both hand wash sinks to not have any cold water or hot water available. A handwashing sink shall be equipped to provide tempered water at a temperature of at least 100ºF (38ºC) through a mixing valve or combination faucet.

RCA: Told PIC that she needed to put in a ticket as soon as possible so that a plumber can come out an repair the sink.

Observed soda machine to have a lot of black build-up.

RCA: Told PIC to ensure that they are properly cleaning the soda machine's daily to ensure that build-up does not occur.

Observed wet nesting of dishes on clean/dry dish rack. COS: PIC unstacked dishes and will let completely air dry before restacking and storing. PIC will also ensure complete air drying in the future.

Observed improper storage of mop not in active use - mop was siting in water from the night before. COS: PIC dumped mop water and will ensure employees hang mop to air dry when not in use and will not let water sit in the basin.

Observed two employee drinks on the prep tables in the main kitchen area. COS: PIC removed items and will create a designated area for employee storage.
