6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed several TCS items cold-holding above 41F on the breakfast buffet (see temperature log). COS: PIC stated items were placed into ice bath around 6AM. Items will be discarded at 9AM.
2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.06(2)(c) - handwashing sinks, installation (pf, c)
Observed hand sink in main kitchen area not supplying hot water at 85F or above. RCA: A handwashing sink shall be equipped to provide tempered water at a temperature of at least 85ºF (29.4 ºC) through a mixing valve or combination faucet.
