Observed improper horizontal separation of raw animal foods and ready-to-eat foods (chicken stored behind chorizo and beef stored behind shrimp). Observed improper vertical separation of raw animal foods and ready-to-eat foods (Observed fish stored under raw beef and raw chicken stored above beef).

COS CA: PIC rearranged foods to prevent cross-contamination.

Observed several TCS items in the reach in cooler to not have any date markings.

RCA: Told PIC that all TCS items need to be date marked if its going to be held for more than 24hrs. Is in a container or package that does not bear a date or day.

Observed inconsistent date marking on TCS food held over 24 hours. CA/COS: PIC will create date and name labels for the food that was just prepped and will be held over 24 hours as well as will create labels for food items that were prepped yesterday. PIC will ensure all employees are creating date labels for a maximum of 7 days if prepping food.

Observed mop stored in mop water in the mop bucket not in active use. CA/COS: PIC removed mop and stored upright to air dry. PIC will also ensure that if mops are not in active use they are stored properly.

Observed the main hand sink in the front kitchen without hand soap. Also observed no hand soap in the women's restroom. CA/COS: PIC replaced hand soap. PIC will also ensure all hand sinks remain accessible and usable at all times.

At time of inspection, did not observe any date marking on food items. CA: PIC will create labels and will ensure from now on employees are dating food items. Food items without date labels are still within the proper date range of a maximum of 7 days.
