6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed multiple TCS food items (diced ham, American slices, chicken sausage) stored in the prep-top cooler and reach in cooler, cold-holding above 41 F. (COS- PIC placed food items on ice since the items were on the prep line since 7 AM.)
RCA: Ensure all TCS food items are cold-holding at 41 F or below at all times.
2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.06(2)(o) - using a handwashing sink- operation & maintenance (pf)
Observed employee filling a bucket with water in the hand washing sink. (COS- Employee removed bucket from hand sink on to the dish washing table.)
RCA: A handwashing facility may not be used for purposes other than handwashing.
4-2A - food stored covered
Regulation: 511-6-1.04(4)(c)1(iv) - packaged & unpackaged food, food stored covered(c)
Observed raw bacon, sausage patties, burger patties, and cheesesteak filets stored in the reach in cooler without a cover.
RCA: storing the food in packages, covered containers, or wrappings, except for loosely covered or uncovered containers in which food is being cooled if protected from overhead contamination.
