6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed multiple TCS food items in various coolers cold-holding above 41 F. (COS- PIC disposed food items in the trash.)
RCA: Ensure all TCS food items are cold-holding at 41 F or below at all times.
6-1B - proper hot holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; hot holding (p)
Observed rice in the steam table hot holding below 135 F. (COS- PIC replaced rice to with a temperature of 137 F.)
RCA: Ensure all TCS food items are hot holding at 135 F or above at all times.
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(5)(k) - controlling pests (pf, c)
Observed various flies throughout the establishment.
RCA: Ensure to maintain proper pest control procedures to reduce the presence of pests.
17A - toilet facilities: properly constructed, supplied, cleaned
Regulation: 511-6-1.07(2)(l) - toilet rooms, enclosed (c)
Observed the employee restroom in the kitchen does not self-close.
RCA: Except where a toilet room is located outside a food service establishment and does not open directly into the food service establishment, such as a toilet room that is provided by the management of a shopping mall, a toilet room located on the premises shall be completely enclosed and provided with a tight-fitting and self-closing door.
17B - garbage/refuse properly disposed; facilities maintained
Regulation: 511-6-1.07(2)(q) - outdoor refuse areas, curbed & graded to drain (c)
Observed dumpster located on grassy ground.
RCA: Outdoor refuse areas shall be constructed in accordance with Law and shall be curbed and graded to drain to collect and dispose of liquid waste that results from the refuse and from cleaning the area and waste receptacles.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(2)(a) - floor, walls, & ceilings, cleanability (c)
Observed missing tile on the walls in the customer restroom, exposing plywood.
RCA: Ensure all walls, floors, and ceilings are smooth, durable, and cleanable at all times.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed a hole in the wall of behind the 3 compartment sink in the warewashing area and in the dry storage room.
RCA: Ensure all physical facilities are in good repair at all times.
