Observed containers of roasted chicken wings, chicken bites, and no bake cheesecake stored in the prep-top cooler without a cover. Also observed container of flour stored on the make line rack uncovered.
RCA: Ensure all food items are covered at all times.
14A - in-use utensils: properly stored

Observed scoop stored inside a container of flour with the handle in the flour.
RCA: Ensure all scoops stored in non-TCS food items has the handle not touching the food items.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(a) - equipment & utensils, air-drying required (c)
Observed food pans stacked above the 3-compartment sink while wet.
RCA: Ensure all dishes are allowed to air dry prior to stacking.
