4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed multiple pots and utensils with food debris on the interior and/or exterior. COS: PIC removed items from service and had them washed/rinsed/sanitized again.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Damaged concrete in front of kettles only partially patched. CA: The floor should be repaired like the concrete was repaired in front of the tilt skillets on the opposite side of the cook line - complete and entirely in one large patch to fix the area instead of small patches here and there.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(3)(g) - mechanical ventilation, sufficient capacity to prevent buildup of heat, steam, smoke, fumes & odors (c)
Exhaust hood ventilation system not working above the cook line. When the switch is flipped, you can hear some component of it try to turn on but no suction occurs to remove contaminants. CA: Must be serviced and fixed by 23 FEB 2026.
