OBSERVED SEVERAL OPENED RTE TCS FOOD ITEMS STORED OVER 24 HOURS WITH NO DATE MARKING (CHOPPED LETTUCE, DICED TOMATOES, COOKED BEEF, DELI TURKEY, DELI HAM.) CA: RTE TCS FOOD ITEMS STORED OVER 24 HOURS SHALL BE DATE MARKED FOR A MAXIMUM OF 7 DAYS. THE DAY OF PREPARATION COUNTS AS DAY 1. COS: PIC DISCARDED FOOD ITEMS.

Regulation: 511-6-1.07(5)(d) - cleaning ventilation system, nuisance & discharge prohibition, cleaned in way not to cause contamination or create a public health hazard (c)
OBSERVED ACCUMUALTION OF GREASE DEBRIS ON GRILL HOOD FILTERS. CA: FILTERS SHALL BE CLEANED AND CHANGED SO THEY ARE NOT A SOURCE OF CONTAMINATION BY DEBRIS. CB: PIC IS PUTTING IN A MAINTENANCE ORDER FOR GRILL HOODS.
