OBSERVED REACH-IN COOLER COLD HOLDING TCS FOOD ITEMS AT TEMPERATURES ABOVE 41F (STEAK 58F, STEAK 57F, CHICKEN 58F, STEAK 57F, AL PASTOR 57F.) CA: COLD HOLDING TCS FOOD ITEMS SHALL BE MAINTAINED AT TEMPERATURES 41F OR BELOW WHEN STORED. COS: PIC DISCARDED ALL TCS FOOD ITEMS INSIDE REACH-IN COOLER AND WILL NOT USE COOLER UNTIL IT IS REPAIRED OR REPLACED.
