Cooling methods being used/observed were not adequate in rapidly cooling Time/Temperature Control for Safety Foods. Observed large pan of ham salad cooling covered and double pans of ground burger meat and slaw stacked on top of each other. Cool foods rapidly in thinner layers. Separate pans to single layers and uncover/stir ham salad. COS: MOVED TO FREEZER.
16B - plumbing installed; proper backflow devices
Regulation: 511-6-1.06(2)(r) - system maintained in good repair (p, c)
Observed extreme leak at bathroom hand sink in kitchen rendering unable to use. CA: Repair. Continue to use nearby kitchen hand sink for handwashing until repaired.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(d) - nonfood-contact surfaces (c)
food debris observed can exterior, bag exterior, etc in dry storage area. CA: clean exterior of food packaging.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(2)(i) - light bulbs, protective shielding (c)
Observed light in freezer missing shielding. CA; add shield to freezer light
