12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
At time of inspection, observed an in-use sanitizer bucket on the floor, with no detectable sanitizer concentration. COS: PIC emptied, cleaned, and refilled the bucket with sanitizer solution (proper concentration verified with chlorine test strip). Change out often enough to keep the chemical sanitizing solutions in which wet wiping cloths are held between uses free of food debris and visible soil. Containers of chemical sanitizing solutions in which wet wiping cloths are held between uses shall be stored off the floor.
14A - in-use utensils: properly stored

At time of inspection, observed a plastic bowl serving as a scoop inside a bin of rice. Scoops with designated handles must be used and the scoops must be stored so that the handle does not come into contact with the food product.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(3)(f) - lighting intensity, adequate in food prep, storage & service areas (c)
At time of inspection, observed light socket with no bulb in the dry storage room (the only light fixture in the room). Replace the bulb, to provide adequate lighting in the dry storage room.
