Need thermometers in all coolers, freezers.
18 - insects, rodents, and animals not present

Observed flies in ware washing area. Need to get pest control to come and spray.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(1)(i) - nonfood-contact surfaces (c)
Need to clean under and around all food prep areas. Floors, walls.
17B - garbage/refuse properly disposed; facilities maintained
Regulation: 511-6-1.06(5)(q) - cleaning receptacles, in manner to prevent contamination and build-up (c)
Need to clean area around dumpster and Grease bin.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(1)(a) - indoor materials (c)
Food splash build up on the walls near the pizza ovens and prep area. Dust build up on the ceiling tiles around the ceiling vent in the dish room. Clean often enough to prevent accumulations.
