Observed potentially hazardous food (chicken salad & pimento cheese salad) cold held at greater than 41F. COS- PIC discarded all items stored in Grab n' Go cooler. CA- all food items must be kept below 41 F
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed sanitizer on dishwasher not dispensing at the correct concentration.COS- PIC primed dishwasher to alleviate clogs or air bubbles
