6-1B - proper hot holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; hot holding (p)
Observed small personal pizza being stored in warmer cabinet. Cabinet is currently not working. Pizza was below 135F. COS item was disposed of. CA repair warmer cabinet prior to use.
2-2A - management knowledge, responsibilities, reporting
Regulation: 511-6-1.03(2)(o) - person-in-charge duties (pf)
The PIC could not provide documentation or otherwise satisfactorily demonstrate during the inspection, that all food employees and conditional employees are informed of their responsibility to report to management information about their health and activities as it relates to diseases that are transmissible through food.
EHS provided employee health reporting agreement sheet.
2-2E - response procedures for vomiting & diarrheal events
Regulation: 511-6-1.03(6) - clean-up of vomiting and diarrheal events(pf)
The Person in Charge could not provide details or proof during the inspection that a proper disinfectant would be utilized for responding to a vomiting or diarrheal event in the the establishment.
Facility does not have required cleaning agents in facility to follow posted clean up procedure.
CA provide facility with written clean up procedure with details showing proper disinfectant will be utilized and what PPE will be used etc.
6-2 - proper date marking and disposition
Observed RTE food items in prep top cooler that were passed there discard date. COS Chicken, Bacon, and Sauces were disposed of.
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(5)(k) - controlling pests (pf, c)
Observed Flies flying in main kitchen area. CA: Reach out to certified pest control professional for prevention options.
16B - plumbing installed; proper backflow devices
Regulation: 511-6-1.06(2)(r) - system maintained in good repair (p, c)
Observed handwashing sink by 3 compartment sink not draining at time of inspection. CA repair sink so that it drains correctly.
