EHS observed wings in fryer basket that was 108F that had just been cooked. Violation: poultry must be cooked to 165F for 15 seconds. CA: EHS had PIC instruct cook to finish cooking to minimum 165. EHS notified PIC that if wants to use non-continuous cooking process must submit procedures to Health Department for approval.
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
EHS observed coleslaw that was not date marked. Violation: ready to eat TCS foods shall be date marked if held for more than 24 hours. Food must be discarded after 7 days. CA: EHS instructed PIC to ensure that ready to eat TCS foods are date marked. Cole slaw discarded.

Violation: 1. A handwashing sink shall be equipped to provide tempered water at a temperature of at least 100ºF (38ºC) through a mixing valve or combination faucet. Pf Inspector note: EHS observed the handwashing sink not reaching 100F. Corrective action: EHS instructed PIC to have sink maintenance and maintained to reach temperature of at least 100F

violation: (iv) Except as specified under paragraph 2. of this subsection and when cooling as specified in DPH Rule 511-6-1-.04(6)(e)2.(ii), storing the food in packages, covered containers, or wrappings, except for loosely covered or uncovered containers in which food is being cooled if protected from overhead contamination; Inspector note: EHS observed raw burgers thawing in reach-in cooler on a top to container directly underneath wired rack. Corrective action: EHS instructed PIC to have meat placed in a food-grade container with a covering to protect from potential contamination.
