EHS informed PIC of the need to keep the area clean so that it does not present itself as a harboring condition for pests.

Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below or 135°F (57°C) or above, except that roasts cooked to a temperature and for a time specified in subsection (5)(a)2 of this Rule and reheated using the same temperature and time conditions as cooking may be held at a temperature of 130°F (54°C) or above. EHS questioned PIC on how long the items had been in the unit and PIC stated since approximately 6 AM and that the facility has been having issues with the back holding well of the unit in question. EHS informed PIC of the need to discard items and place ice in the back holding well until the unit can be replaced or fixed. PIC stated that the unit was recently serviced and that it still is not working.

Ambient air temperature, water pressure, and water temperature measuring devices shall be maintained in good repair and be accurate within the intended range of use. Per PIC, the facility has been having issues with both units. EHS informed PIC of the need to have the units serviced; EHS will follow-up with the facility.
