EHS observed packaged raw bacon stored above packaged ready to eat food and waffle mix in reach in cooler farthest from grill. Violation: food shall be protected from cross contamination by storing ready to eat foods above raw foods. CA: PIC moved bacon to walk in cooler.

EHS observed waffle mix build up around waffle makers. Violation: Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. CA: EHS instructed PIC to have area cleaned at interval to prevent accumulation.

EHS observed RIC cooler with accumulation of waffle batter. EHS advised PIC to increase frequency of cleaning 511-6-1.05(7)(a)2,3 - Equipment, Food/Nonfood-Contact Surfaces, and Utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (C) 2. The food-contact surfaces of cooking equipment and pans shall be kept free of encrusted grease deposits and other soil accumulations.

3. Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

Violation: A food establishment shall have procedures for employees to follow when responding to vomiting or diarrheal events that involve the discharge of vomitus or fecal matter onto surfaces in the food service establishment. The procedures shall address the specific actions employees must take to minimize the spread of contamination and the exposure of employees, consumers, food, and surfaces to vomitus or fecal matter. Pf Inspector note: EHS observed facility without complete supplies for vomiting and fecal events. Corrective action: PIC will order new kit for facility.

Violation: Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. Inspector note: EHS observed drawer under grill with food debris and accumulation on non-contact surface.. Corrective action: EHS instructed PIC to have drawers cleaned as frequently as to prevent such accumulation.
