Observed blenders stacked inside each with water residue inside. (10) Protection of Clean Items.

(a) Equipment and Utensils, Air-Drying Required. After cleaning and sanitizing, equipment and utensils:

1. Shall be air-dried or used after adequate draining before contact with food; and

2. May not be cloth dried except that utensils that have been air-dried may be polished with cloths that are maintained clean and dry. EHS informed the PIC that equipment should air dry in an inverted position before stacking.

Observed single service utensils stored under the register in bins that do not help protect the food contact surface from contamination. 1. Except as specified in paragraph 4 of this subsection, cleaned equipment and utensils, laundered linens, and single-service and single-use articles shall be stored:

(i) In a clean, dry location;

(ii) Where they are not exposed to splash, dust, or other contamination. EHS informed the PIC of the need to store utensils in a sealed container or packaging.

Observed missing baseboard tile along the front counter, dust accumulation on ceiling vents/tile and along wall/heating lamp, damaged floor tiles at the rear of the facility near the back door, and 2 tiny dead roaches (front cabinetry/back storage area). EHS informed the PIC of the need to clean the facility routine.
