(d) Nonfood-Contact Surfaces. Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. EHS informed the PIC of the need to clean all equipment routinely and thoroghly.

  2. Except for cleaning that is necessary due to a spill or other accident, cleaning shall be done during periods when the least amount of food is exposed, such as after closing. EHS informed the PIC of the need to routinely clean the facility.

EHS observed two sauce bottles that is stored directly on top of the prep top cooler without any labels.

CA-PIC needs to make sure that once items are taken out of its original packaging then it must be labeled with its common name.
