EHS observed wet wiping cloths stored next to hand sink closest to front in main kitchen area with no chemical sanitizer in bucket. Violation: Cloths in-use for wiping counters and other equipment surfaces shall be:

(i) Held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n) CA: EHS instructed PIC to remake bucket with sanitizer solution.

Observed wet wiping cloths stored on the prep counter closest to the handsink in the main kitchen area. Between uses, wet wiping cloths should be stored in sanitizer solution. PIC placed cloths in sani buckets.
