6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
EHS observed milk and yogurt in reach in refrigerator in front food service area above 41 degrees Fahrenheit. See temperature log for temps. Violation: TCS foods shall be maintained at 41 degrees Fahrenheit or below unless being cooked, cooled, or prepared. CA: EHS instructed PIC to move items to cooler in storage area to ensure they cool back down as it was just after breakfast was done being served.
2-2A - management knowledge, responsibilities, reporting
Regulation: 511-6-1.03(2)(o) - person-in-charge duties (pf)
EHS observed facility unable to produce employee health reporting forms. PIC stated they are kept in the office and no one with access to office was available. Violation: Food employees and conditional employees are informed in a verifiable manner of their responsibility to report in accordance with the Chapter, to the person in charge, information about their health and activities as they relate to diseases that are transmissible through food. CA: Ensure employee health reporting forms are accessible at all times so that they can be made available upon request.
2-2E - response procedures for vomiting & diarrheal events
Regulation: 511-6-1.03(6) - clean-up of vomiting and diarrheal events(pf)
EHS observed facility without written procedures for if fecal/vomitus event were to occur. PIC described procedure but there is no written procedures. Violation: A food establishment shall have written procedures for employees to follow and an EPA registered disinfectant effective against Norovirus available on-site at the food service establishment when responding to vomiting or diarrheal events that involve the discharge of vomitus or fecal matter onto surfaces in the food service establishment. The procedures shall address the specific actions employees must take to minimize the spread of contamination and the exposure of employees, consumers, food, and surfaces to vomitus or fecal matter. CA: Ensure that procedures for fecal/vomitus events are written and that a sanitizer capable of killing Norovirus is available.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
EHS observed facility without test strips for quaternary ammonia sanitizer. Violation: A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided. CA: Obtain test strips for quaternary ammonia sanitizer.
