Observed food(cut tomatoes, cheeses dip, cooked beef) being cooled by nonapproved method in large containers, overfilled, tightly covered, and with temperature not being monitored. CA: Discussed cooling in thin, shallow pans, separating into smaller portions, loosely or not covering, and ensure temperature is monitored. Do not use large pots with lids to cool. COS: Items were moved to thin shallow pans, lightly covered, and placed in freezer to cool quickly.
