Observed improper cold holding of potentially hazardous TCS foods in the prep top cooler (guacamole, sour cream). See temp log. CA: Cold held TCSs foods shall maintain an internal temperature of 41F or below. COS: PIC moved foods to the walk-in cooler to rapidly cool.

Observed improper hot holding of potentially hazardous TCS foods in the warmer cabinet (fiesta potatoes, hash brown patties, chicken tenders). CA: Hot held TCS foods shall maintain an internal temperature of 135F or higher. COS: PIC re-heated foods to above 165F.
