Observed employee change tasks without washing hands; employee handled money then went to the kitchen and handled equipment without washing hands in between task change. CA: Instructed employee to wash hands before proceeding with any other tasks in the kitchen.

Observed potentially hazardous TCS foods (raw bacon, kolaches) improperly cold holding above 41F (see temp log). CA: Discussed with PIC. Bacon was out of temp for an unknown period of time and was discarded. Kolaches were out of temp for less than 4 hours and were moved to the cooler to rapidly cool.

Observed visible food debris and scraps in rinse and sanitize compartments of three compartment sink. CA: Educated PIC on proper use of three compartment sink. Dirty dishes should be washed in the wash compartment, rinsed with water in the rinse compartment, and sanitized in the sanitize compartment. Rinse and sanitize compartments are food contact surfaces, should not have dirty dishes or food scraps. Instructed PIC to clean and sanitize compartments before using again.

Observed frozen raw bacon thawing at room temperature on three compartment sink. CA: Educated PIC that time/temperature control for safety (TCS) foods should not be allowed to thaw at room temperature and should not thaw on top of food contact surfaces. PIC immediately moved bacon to reach in cooler to thaw. PIC stated that bacon would be thawed on bottom shelf of reach in cooler from now on.
