Observed potentially hazardous TCS foods improperly cold holding above 41 degrees Fahrenheit (see temp log). Internal thermometer was reading ~48F before the door was opened. CA: Discussed with PIC. All TCS foods that were out of temp for more than 4 hours or unknown will be discarded. Foods out of temp for less than 4 hours must be moved to a freezer since there are no other coolers. Cooler can not be used for TCS foods until it is re-checked by the health department after being repaired/replaced. Discussed repairing/replacing the gaskets.
