Observed several pans of food in the prep line reach-in cooler and in the chest freezer with no lid or covering. CA: Food shall be stored covered to protect from overhead contamination. COS: PIC instructed employee to add lids to all pans.

Observed utensil stored in room temp standing water in between uses by the front dessert display. CA: Utensils stored in water between usage shall under running water or water that is maintained at at least 135F. COS: PIC stated container will be removed.

Observed potentially hazardous TCS foods (tomato puree and cooked pasta in the cookline prep cooler and queso in the walk-in cooler) improperly cold holding above 41 degrees Fahrenheit for greater than 4 hours or an unknown amount of time. CA: PIC discarded food.

Observed 3 hand wash sinks with no trash cans in close proximity, 2 hands wash sinks that did not have soap, and hand wash sinks being used for dumping food/rinsing dishes. CA: Discussed with PIC. Trash cans were moved to each sink. Discussed ensuring that all hand sinks are fully stocked and used for washing of hands only.

Observed potentially hazardous TCS foods that had been held past the 7 day expiration (cooked beef expired 1/20, cooked wings expired 1/20, chipotle mayo expired 1/14, barbacoa salsa expired 1/17, queso cheese expired 1/22). CA: PIC discarded all foods. Discussed proper date marking procedure with the PIC.

Observed potentially hazardous TCS foods (house made dragonfruit syrup, queso) that per the PIC were made more than 24 hours prior and were not labelled with a 7 day expiration. CA: PIC discarded food.

Observed potentially hazardous TCS food (sliced tomato, sliced cucumber, salsa verde, diced tomato, guacamole, steak marinade, carne parilla, carne molida) prepped less than 4 hours prior that were actively cooling by unapproved methods: tightly sealed pans, deep pans, stacked pans rather than a single layer, using working prep coolers rather than the walk-in cooler or freezer). CA: Discussed proper cooling with PIC. PIC moved pans to the walk-in freezer, ice baths, vented lids.
