Observed PIC wash, rinse and sanitize a coffee pot and then immediately use it to brew coffee without allowing it to air dry. CA: Discussed keeping back up dishes cleaned and available for use.

Observed no irreversible thermometer or heat sensitive tape for measuring the utensil surface temperature for the heat sanitizing dish machine. Digital temperature display was reading 132F final rinse temp. CA: Discussed requirement to have a back up means of temperature verification with the PIC. Thermometer or temp strips will be ordered.

Observed employees prepping food in kitchen are without wearing hair restraint. CA: Employee put on hair restraint, discussed wearing hair restraints in food service areas with PIC.

Observed employee wearing an apple watch while prepping food. CA: Employee removed watch, washed hands placed new gloves on before returning to food prep area.

Observed employee grab fries out of the fry well with bare hands and begin eating them at the front counter; employee used her bare hand to scoop fries off the counter and back into the fry well; employee used her bare hand to hold the onion rings in the container as she transported it to the bag. CA: Instructed PIC and employee that ready to eat foods cannot be touched with bare hands; gloves or a utensil must be used. Employees cannot eat food at the front counter; eating must occur in a designated area, such as the dining room. The fries were discarded.

Observed employee washing dishes sanitize dishes and rinse the sanitizer off with clean water before setting them aside to dry. CA: Instructed PIC and employee that all dishes must be sanitized as the last step and then fully air dried before they are considered clean, sanitized, and safe for reuse. Employee immediately resanitized the dishes.

Observed multiple boxes of soda syrup stored on a shelving unit mixed with employee personal items (bags, jackets, shoes). CA: Instructed PIC that food cannot be stored with personal items; the soda syrups must be moved to food storage.

Observed improper hot holding of potentially hazardous TCS food (chicken nuggets and chicken fries) below 135 degrees Fahrenheit in the warmer drawers (see temp log). CA: Discussed with PIC. Food was discarded.

Observed potentially hazardous TCS food (sliced tomatoes) stacked in tightly sealed containers at 45-49 degrees Fahrenheit with printed labels on each pan with a prep time of 9:08am today. The current time was 3pm. CA: Discussed with PIC. Tomatoes had not been removed from the walk-in cooler since they were moved there after prep at 9am. Tomatoes were discarded. Discussed proper methods of cooling and actively monitoring temperatures.
