Observed employee handle money then begin making a milkshake without washing hands. CA: Food employees shall clean their hands immediately before engaging in food preparation after engaging in other activities that contaminate the hands. COS: Employee washed hands before finishing prepping the milk shake.
2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.07(3)(a) - handwashing cleanser, availability (pf)
Observed no hand soap at the front hand wash sink. CA: Each hand washing sink shall be provided with a supply of hand soap. COS: PIC stated the sink was no longer used for hand washing. The sink was labelled as a hand wash sink and based on the flow of food and facility layout, this sink would be required to remain a hand wash sink. Soap will be stocked.
2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.07(3)(b) - hand drying provision (pf)
Observed no paper towels or approved means of drying hands at the front hand washing sink. CA: Each hand washing sink shall be provided with individual, disposable towels. COS: PIC will stock sink with paper towels.
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed opened gallon of milk not labelled with an expiration date. PIC stated it had been opened two days prior. CA: Refrigerated, ready-to-eat, TCS food prepared and packaged by a food processing plant shall be consumed or discarded, not to exceed a total of 7 days. COS: PIC discarded milk.
12A - contamination prevented during food preparation, storage, display
Regulation: 511-6-1.04(4)(q) - food storage (c)
Observed boxes of vanilla ice cream mix stored directly on the floor in the walk-in cooler. CA: Food shall be stored in a clean, dry location at least 6" off the ground. COS: Discussed with PIC and boxes will be relocated.
