Observed a spray bottle with clear liquid stored on a prep top next to microwave. PIC stated the bottle had water in it. CA: All foods containers should be identified with the common name of food.
11A - proper cooling methods used: adequate equipment for temperature control
Regulation: 511-6-1.04(6)(e) - cooling methods (pf, c)
Observed a pan of hard boiled peeled eggs stored in the walk-in cooler tightly wrapped in plastic. PIC stated the eggs had been placed in the cooler 2 hours ago. Also observed soup cooling in a freezer in a large stock pot. CA: Cooling methods such as ice baths, moving foods to shallow containers, and leaving foods uncovered while cooling should be used in order to meet the cooling parameters.
12B - personal cleanliness

Observed employees handling food while wearing bracelets. CA: Employees should maintain personal cleanliness by avoiding wearing jewelry while handling food and equipment.

Observed several utensils stored in standing water next to crockpots of rice. CA: Utensils stored in water should be in running water or water that can maintain a temperature of 135F or higher. COS: PIC removed the scoops from water

Observed scoops stored in bulk containers of food with handle in contact with food. CA: Scoops should be stored in a way to prevent contamination of food: with handle out of food or scoop entirely out of the container COS: PIC removed the scoops from the containers

Observed pans and bowls stored stacked while still wet. CA: All dishes and utensils should be stored in a self draining position after washing to allow for air drying.
