Observed improper cold holding of potentially hazardous TCS foods (milk in carafe; hardboiled eggs, cream cheese and whipped cream in the reach-in cooler in the self-serve area; shredded cheese, yogurt and hard boiled eggs in the reach-in cooler in the kitchen). See temp logs. Ambient air thermometers inside the coolers were reading 44F. CA: Cold held TCS foods shall maintain an internal temperature of at least 41F or below. COS: Foods were out of temp for more than 4 hours and PIC discarded. Maintenance adjusted the thermostat setting of the coolers. PIC will monitor temps to ensure proper temperature is maintained.

Other foods were out of temp for less than 4 hours and moved to rapidly cool. Discussed fixing the air conditioning in the kitchen. Monitor cooler to ensure proper cold holding.
