Observed potentially hazardous TCS food items in WIC and RIC improperly cold holding above 41 degrees F. CA: All TCS foods being cold held must be 41 degrees F or below. COS: PIC stated their delivery had just arrived and was out of temp for less than 4 hours. RIC had been opened and closed during delivery and was out of temp for less than 4 hours. Both coolers were left closed to ensure proper temps were achieved and food was cooled within parameters.

Observed food service employee prepping food in kitchen without proper hair restraints on. CA: PIC had employee put hairnet on before returning to work

Observed scoop without handle stored in bulk flour container. CA: PIC removed scoop. Discussed only using scoops with handle to handle does not come in contact with food

Observed cook touch his phone and clothing before putting on gloves to prepare food, without first washing his hands. CA: Instructed cook that anytime he touches his clothing, his person, or his devices such as phone and headphones, he must discard his gloves and wash his hands before working with food. Cook immediately washed his hands.

Observed lasagna cooling tightly covered in the walk in cooler; lasagna was cooked 45 minutes earlier and was 125°F. CA: Instructed PIC foods in cooling must be uncovered or vented to properly cool and to cool very hot foods in the walk in freezer instead of the walk in cooler. Steaming hot foods stored in the walk in cooler will instead heat the food in the cooler and not cool the hot food. PIC uncovered the lasagna and moved it to the walk in freezer.

Observed potentially hazardous foods (ground beef, diced tomatoes, pineapples, diced ham, popcorn chicken, and diced chicken breast in cooler cold held above 41 F. CA: Notified PIC. PIC placed ground beef, diced tomatoes, diced ham, popcorn chicken, and pineapple inside of walk-in cooler to rapidly cool. PIC discarded diced chicken breast. PIC will need to have cooler serviced.

Observed bottled drink placed on prep table where employee was making pizza dough. Keys and phone were also on prep table.CA: Informed PIC that drinks should be stored in single-use cup with lid and straw. Employee personal items should have a designated area to be stored. PIC removed personal items from prep table.
