Sliced tomatoes and mayo in prepline cooler cold holding at temperatures above 41F Employees forgot to turn prepline on in the morning. CA - All TCS (time/temperature control for safety) foods must be cold held at 41F or below. Person in charge turned on prepline cooler and discarded sliced tomatoes and mayo cold holding at temperatures above 41F. Person in charge put new sliced tomatoes and mayo from walk in cooler into prepline.
14B - utensils, equipment and linens: properly stored, dried, handled

Plastic containers stacked wet on drying rack by 3-compartment sink. Person in charge unstacked wet plastic containers.
