Observed racks containing chicken and ribs stored uncovered in WIC. Food must be stored covered, wrapped, or in a container that protects from overhead contamination. PIC placed rack covers over affected products.
14B - utensils, equipment and linens: properly stored, dried, handled

Observed clean, ready-to-use dishware stored with food contact surface unprotected from contamination. Advised PIC on storing dishware inverted or covered to protect from contamination.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed residue on walls of kitchen & floor surrounding grill at main prep area. Observed debris on knife rack & racks in walk in cooler. Non-food contact surfaces including equipment, floors, & walls shall be maintained clean to sight and touch and free of grease or food residue & debris.
