4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed 3 compartment sink sanitizer compartment having 0ppm concentration of QAC. Advised PIC that sanitizer must fall within manufacturer's suggested range of 150-400ppm. PIC removed bubble from feed line of dispensing unit and remade sanitizer to 300ppm.
