Employee wearing gloves wiped prep table down with sanitizer rag; then touched flour tortilla to prep. I immediately advised employee to wash hands and change gloves. Employee did so. High Priority - Employee used tobacco, ate, or drank then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. -employee chewing, removed gloves and prepared to go beverage without washing hands. Employee rubbed hands together for less than 10-15 seconds while washing hands. -recommend more thorough hand washing between tasks.

High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. -taco meat (45F - Cold Holding); shredded cheese (45F - Cold Holding)out of temp less than 4 hours in walk-in cooler. Walk-in cooler recently mopped and door was open. Operator will monitor.

High Priority - Employee dried hands on clothes/apron/soiled towel after washing. -observed employee putting on gloves. When asked, employee stated that hands were washed at front hand wash sink. No paper towels at or near sink. Advised.
