In lowboy reach-in cooler under flat top grill for 1 hour: salmon 45f, chicken 44f. Operator put ice bags on salmon and chicken. After 1 hour, coleslaw got to 38f, salmon got to 37f, chicken got down to 43f, shredded cheese did not change. Corrective Action Taken Warning
