High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Food items stored inside stand alone cooler next to the cook line: Cooked chicken (47F - Cold Holding); Cooked chicken (47F - Cold Holding); Cooked chicken (47F - Cold Holding) Observed containers of cooked chicken dated for 3/26/26 with visible condensation on the inside of the containers. Employees were asked whether cooling verification was being monitored and if cooling parameters were met. Could not determine if the cooling parameters were met or how long the temperature has been above 41 degrees. Stop sale issued. Repeat Violation Admin Complaint

Intermediate - Inadequate number/capacity of cold holding units to maintain time/temperature control for safety food at proper temperatures. Improper cold holding was observed due to insufficient number of cold holding units. Discussed with operator during the inspection, a cooling method must be put in place to ensure cooked foods meet the cooling parameters.
