Observed Steak (47F - Cold Holding at 10:57 AM) and Shredded Cheese Blend (47F - Cold Holding at 10:57 AM) in reach-in cooler on front assembly line. Operator stated the items had been in the cooler for 30 minutes. Discussed with operator corrective steps in getting temperature of food items down to 41F or below.
