High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Ricotta cheese 45F cold hold, plastic container stored in metal pan in make table. Discussed how it is difficult to for cool air to penetrate both surfaces and that the bottom of the plastic container is the the only area not exposed to warm air. Operator stated it was there about 5-10 min. It was placed in lower reach in Corrective Action Taken
