High Priority - Chlorine sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. Observed Triple Sink (Chlorine 10ppm); Operator corrected to Triple Sink (Chlorine 100ppm) Corrected On-Site

High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed Glass refrigerator ; Dairy (48-51F - Cold Holding); cooked meat (51F - Cold Holding) due to refrigeration icing up.. Operator stated less then. 4 hours and moved to other refrigeration. Corrective Action Taken
