Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Dish-machine Chlorine ppm shows no reading on inspector test strips. Establishment is using triple sink with quaternary ammonia.

Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Cutting boards on prep line soiled/no longer cleanable.
