Observed employee drinking water and then handled clean equipment without washing hands. Employee was coached to wash her hands after drinking or eating.
Basic - Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items. Observed a empty employee thermo stored above Alfredo sauce at the walk in cooler. Manager removed the thermo. Corrective Action Taken

Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed dishwasher machine chlorine sanitizer at 0 ppm. Manager started to change the chlorine container . Corrective Action Taken

Observed water at 78°F at two hand wash sink located next to preparation table and one in front of reach in cooler preparation area.The water was running more than three minutes. Repeat Violation
Basic - Food not stored at least 6 inches off of the floor. Observed 5 boxes with dough stored on the floor at walk in freezer. Manager moved the products to the shelves. Corrected On-Site
Basic - Food-contact surface not smooth and easily cleanable. Observed the containers for bread sticks not smooth with heavy accumulation of burnt substance outside and inside.
Basic - In-use ice scoop stored on soiled surface between uses. Observed in use ice scoop stored on soiled container. Manager moved the container to be cleaned and sanitized. Corrective Action Taken

As per manager for less than two hours. Manager moved the products to the walk in freezer for rapid cooling. Corrective Action Taken
