Observed a preparation cooler at front line ham (50 F - Cold Holding); pepperoni (48F - Cold Holding); tuna salad (47F - Cold Holding); ham (50 F - Cold Holding); cut lettuce (47F - Cold Holding); cut tomatoes (47F - Cold Holding); cheese (47F - Cold Holding), as per all food was transferred from another cooler Les than 4 hours ago. Instructed operator to transfer all food back to another cooler maintaining proper cold holding temperature or add ice on the product to rapidly cool and maintain cold holding temperature.
