Intermediate - Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. gouda and Serrano pepper biscuits (house made) (89F - Cooling) at 10:50 since 10:20 - 89F 11:15 Observed covered sitting out on counter. At current rate of cooling product will not reach 70F within 2 hours. Operator decided to use time control. Per operator, out of temperature for 30 minutes. Operator placed time stamp for remaining 3.5 hours. Time control procedure sent to operator. Corrective Action Taken
Basic - In-use utensil in non-time/temperature control for safety food not stored with handle above top of food within a closed container. Observed Pint cup for scooping stored inside container of flour. Operator removed cup. Corrected On-Site
