Per manager they offer undercooked tuna to the public but the packaging and invoices do not say what kind of tuna it is nor do they have any letter of aquaculture or freezing records, establishment was able to obtain letter from Sysco that showed the correct freezing parameters. High Priority - Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. Raw beef stored over hushpuppy mix stored over raw fish in walk in cooler. Raw hamburger patties stored over raw shrimp in raw shrimp in refrigerator in kitchen Raw chicken stored over raw fish in refrigerator in kitchen. Manager rearranged all items during inspection.
