High Priority - - From initial inspection : High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Dish machine not set up. Manager stated the dish machine does not work. Inspector instructed the manager to discontinue the use of the dish machine for sanitization and utilize the three-compartment sink to sanitize dishes until the dish machine is repaired. Inspector also instructed manager to use the three-compartment sink to sanitize all dishes that have been sanitized using the dishwasher machine today. Warning - From follow-up inspection 2025-12-19: Manager is waiting for EcoLab to come and service the machine. They are using the three-compartment sink to sanitize dishes. Time Extended - From follow-up inspection 2026-01-05: Manager stated they tried, but were unable to get a technician to repair the machine due to the Christmas and New Years holidays. Pan containing raw shell eggs stored on shelf above diced onions and pan containing fully-cooked beef. Manager moved the raw eggs to the bottom shelf during this inspection. 3.
