Manager stated the shrimp was thawed two hours prior, then placed into the cooler. Manager added ice to the shrimp to rapidly thaw to 41F. noodles (46F - Cold Holding). Manager stated the noodles were placed into the reach-in cooler two hours prior. The noodles are filled approximately 2 inches above the safe load line indicated on the cooler. Manager portioned the noodles into two pans and added ice to rapidly cool the noodles to 41F. 2. Inside walk-in cooler: milk (61F - Cold Holding); milk (46F - Cold Holding). Manager stated the milk was delivered three hours prior and placed it into the freezer to rapidly cool to 41F. Ambient air temperature inside walk-in cooler is 58F. Repeat Violation Admin Complaint
