High Priority - Cooked/heated time/temperature control for safety food not cooled from 135 degrees Fahrenheit to 70 degrees Fahrenheit within 2 hours. Observed tapioca boba pearls 80F at 2:30. Per manager cooked at 12:00. Manager voluntarily discarded boba pearls during inspection.

Intermediate - Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Observed large buckets of pork broth cooling in walk in cooler at improper rate. Broth 117F at 2:00, cooked and cooling since 1:00, down to 108F at 2:30. Informed manager that dense food items should be separated into smaller containers and stirred to allow proper cooling.
