Basic - - From initial inspection : Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Excessive mold-like buildup, dust, debris on vents for cooler drawers under grill, grey/black in color. Vent cover also has a heavy build up of debris and grease. Interior fans of cooler have excessive build up, appears to be grease, dust, and mold-like, yellow/grey in color. Excessive build up on exterior of equipment throughout restaurant: grill, stoves, prep tables, and make tables with kitchen equipment showing the most build up. Excessive build up under and behind equipment throughout restaurant, food debris and grease build up under most prep areas and coolers with kitchen equipment showing the most build up. Repeat Violation Warning - From follow-up inspection 2026-01-16: Vents/fan still soiled. Walked through with operator and showed him the intake vents on lowboys on cook line. Removed drawers and showed interior fans soiled with mold-like/build up. Operator had employees clean drawers themselves as well as bottom of cooler, but had not cleaned vents and fans. Operator called technician during inspection to send pictures and instructions on what needed to be replaced/cleaned. Time Extended Corrective Action Taken
